Healthy Eating on the Go Made Simple: Breakfast

Breakfast is my favourite meal of the day! At the weekend I spend ages planning extravagant brunches but during the week I just want something quick and easy but still delicious which will keep my stomach from rumbling until lunch.

My go to breakfasts are:

  • Breakfast burrito – this is my current fave! I mash some avocado onto a wholemeal wrap, throw in some spinach, add two scrambled eggs, some feta cheese and salsa. It takes 5 minutes to put together but it’s super tasty
  • Muffins – forget McDonalds, muffins made at home with your choice of toppings are amazing. I have mine toasted with either avocado or houmous, sundried tomatoes and eggs which I’ve fried in some FryLite spray
  • Bagels – another of my favourites, I love toasting a bagel and filling it with turkey bacon, egg, reduced sugar ketchup and a low fat cheese slice. If I’m feeling something sweet for breakfast instead I buy cinnamon and raisin bagels and eat them hot with either butter or reduced sugar jam
  • Toast – the original breakfast which never gets old. Toast is so versatile you can have it sweet with peanut butter, banana, cinnamon and honey, savoury with avocado, feta and chilli flakes or any combination you choose! This really is the speediest, low effort breakfast
  • Smoothie – I love a breakfast smoothie in the summer and frozen banana has been a real gamechanger for me. Adding a frozen banana makes your smoothie gorgeously rich and creamy. Try combining your banana and milk with peanut butter, cinnamon and (if you want) vanilla protein
  • Yoghurt bowls – this is one I can’t usually trust myself with, I can’t have granola in the house because I eat it straight out of the box but if you want a quick and tasty breakfast try greek yoghurt, fresh berries and granola. If you’re feeling extra fancy you can batch make granola at the weekend so you can have homemade granola for your breakfasts all week – you can even try my Super Simple Homemade Granola recipe!
  • Oats – another original breakfast which has millions of possible combinations. I love experimenting with different flavours in my oats, a variety of toppings and trying new things. If you want to see some of my favourite tried and tested oats check out my Instagram page
  • Overnight oats – if you’re in a real rush overnight oats are the perfect grab and go breakfast. You can make them up the night before, pop them in the fridge and take them out ready to eat the next morning. Keep an eye out on my blog because I’ll have a recipe for banana and peanut butter overnight oats coming soon
  • Omelette – I find omelettes extremely filling! Again you can throw any ingredients you want into a pan with some whisked eggs and the result only takes a few minutes to cook. My go to winter breakfast is a cheese and mushroom omelette with plenty of reduced sugar ketchup
  • Weetabix – last but not least Weeatbix is a nostalgic breakfast for me! I used to eat it every day as a kid and I still love it now. To make it a bit more grown up I cook my Weetabix in honey and cinnamon before topping it with frozen berries

    These are all great and healthy ideas! I’ve always wanted to make overnight oats, but I just haven’t done so. I’m feeling inspired to try some of these on the go meals, as I’m always rushing in the morning. Thanks for sharing your ideas!

    Your breakfast burrito sounds delicious!! I usually have something similar – avocado mashed, egg either in/on a piece of pita bread!

    I love layering my bagel too, depending on what I’m in the mood for I either have egg/avocado/some grilled veggies or cream cheese with strawberry jam!

    Smoothies are perfect in the morning, personally I drink a smoothie after every workout once I get back home, frozen berries in a smoothie is heavenly because then you don’t have to worry about ice 🙂

    There are some great ideas here! I always have overnight oats or yoghurt with berries and granola when I’m at work. I’m loving the sound of the breakfast burrito though (minus the feta lol)!
